2025 Roots Farmshare – Week 16


What’s in Your Share This Week

Italian Garden Zucchini & Potato Soup

A hearty but fresh Italian-inspired soup that makes the most of zucchini, potatoes, and herbs.

Ingredients

  • 2 medium zucchini, diced

  • 2 medium potatoes, cubed

  • 2 carrots, chopped

  • 2–3 stalks parcel, chopped

  • 1 onion (or from herb bundle), chopped

  • 3–4 cloves garlic, minced

  • 1 can diced tomatoes (or 3 fresh, chopped)

  • 6 cups stock (veg or chicken)

  • 1 bay leaf

  • 1 tsp oregano

  • 1 tsp basil (fresh or dried)

  • ½ tsp red pepper flakes (optional)

  • Olive oil, salt & black pepper

  • Fresh parsley or basil to finish

Method

  1. Heat olive oil in a soup pot. Sauté onion, garlic, carrots, and parcel until softened.

  2. Add potatoes and zucchini, stirring to coat.

  3. Stir in tomatoes, stock, bay leaf, oregano, and basil. Season with salt, pepper, and chili flakes.

  4. Simmer 20–25 minutes, until vegetables are tender.

  5. Finish with fresh parsley or basil and a drizzle of olive oil.

Serve with crusty bread or sprinkle with parmesan.


Romaine & Cucumber Salad with Herb Dressing

  • Chop romaine and cucumbers.

  • Whisk olive oil, lemon juice, chopped herbs, salt, and pepper for a quick dressing.

  • Toss and serve chilled.


Quick Pickled Cucumbers & Carrots

  • Slice cucumbers and carrots thin.

  • Cover with equal parts vinegar and water, plus 1 tsp salt and 1 tsp sugar per cup.

  • Refrigerate for a few hours — crisp and tangy!


Roasted Veggie Medley

  • Cube potatoes, carrots, and zucchini.

  • Toss with olive oil, salt, pepper, and chopped oregano or rosemary from the herb bundle.

  • Roast at 400°F until golden and caramelized.

Each Farmshare member will receive a Roots Farm tote bag for pickups. Your share will be packed in a plastic tote—please unpack it into your own container or bag onsite.

If someone else is picking up your share or you're unable to attend, let us know so we can arrange a donation.
