Snap Pea & Carrot Salad
Thinly slice carrots and combine with sugar snap peas and salad mix. Toss with olive oil, lemon juice, salt, and pepper. Top with sunflower seeds, feta cheese, or toasted almonds for extra crunch.
Rosemary Roasted Carrots & Radishes
Toss carrots and radishes with olive oil, chopped rosemary, salt, and pepper. Roast at 425°F until tender and lightly caramelized. Finish with a squeeze of lemon juice before serving.
Sugar Snap Pea Stir-Fry
Quickly stir-fry sugar snap peas with sliced carrots and green garlic. Finish with soy sauce, sesame oil, and sesame seeds. Serve over rice or noodles for a simple weeknight meal.
